Utilizzando i frutti dell’azzeruolo si può ricavare un ottimo liquore dolce, fresco, ottimo come digestivo.
La grappa che otterremo avrà un profumo mielato, dal sapore fruttato e dal colore aranciato.
Ingredienti necessari per preparare la grappa d’Azzeruolo
• 25-30 di azzeruole mature (la maturazione si conclude a settembre)
• 300 g di zucchero
• 700 ml di acqua
• 1 lt di grappa
Preparazione della grappa d’Azzeruolo
Mettere due manciate di azzeruole mature in un litro di grappa e lasciare macerare al sole per due mesi, ricordandosi di scuotere il contenitore ogni giorno per mescolare bene.
Trascorso il tempo necessario, la grappa si dovrà filtrare e si procederà alla preparazione dello sciroppo.
Lo sciroppo si fa mettendo 700 ml di acqua fredda e 300 grammi di zucchero in un pentolino. A fuoco basso mescoleremo finché lo zucchero non si sarà sciolto ed il composto non sarà diventato più denso dell’acqua, sempre mantenendo la trasparenza (non deve prendere la colorazione del caramello).
Una volta fatto si aggiungerà la grappa e si lascerà stagionare l’infuso per altri 30 giorni prima di gustarlo.
Curiosità sulla grappa d’Azzeruolo
I soldati di Ottaviano Augusto fecero una scoperta sorprendente nel Mediterraneo orientale: l’azzeruolo, che fu immediatamente importato in Europa, guadagnandosi il nome di “pomo imperiale”. Questo frutto, di forma ovoidale, si distingue per il suo intenso colore rosso e il suo sapore delizioso, leggermente acidulo, che ricorda vagamente quello del biancospino.
La maggior parte degli esperti di botanica ritiene che questa specie abbia le sue radici in Asia Minore o sull’isola di Creta, da dove si è diffusa gradualmente in tutto il bacino del Mediterraneo, in particolare nel Nord Africa, e in Europa.
L’azzeruolo rappresenta una delle fonti più importanti di vitamina C nella natura. Le azzeruole fresche sono conosciute per il loro potere dissetante, rinfrescante e diuretico, con effetti ipotensivi. La polpa, in particolare, è nota per le sue proprietà antianemiche e oftalmiche.
Questi frutti, che somigliano a piccole mele, offrono un equilibrio agrodolce e contengono una buona quantità di polpa, oltre a essere ricchi di vitamina A. Sono adatti per la preparazione di confetture e gelatine, ma anche per insalate e macedonie di frutta. Inoltre, vengono spesso impiegati nella pasticceria per decorare torte e per aromatizzare liquori.
